xx Paprika Prawn Toast with Cherry Tomato Salsa

Ingredients

10 king prawns
100g cherry tomatoes
3 tbsp tomato ketchup
1 egg
2 tsp Plain flour
Handful of fresh coriander, chopped lengthways
2 cloves garlic, chopped
1 tsp caster sugar
Pinch paprika
1 tsp crushed chillies
1 tbsp Soy sauce

Method

Heat olive oil in a pan and add cherry tomatoes.

Meanwhile put prawns, egg, flour, a dash of olive oil, salt and pepper in to a blender and blitz until it resembles a thick paste.

Take a slice of bread and cover with a thick layer of the prawn paste and spread all over. Place bread paste side down in to a frying pan with oil and leave to cook through.

For the skewers alternate with tomatoes and prawns and put in to a hot griddle pan to cook.

Now add soy sauce, chopped garlic, 1 tbsp tomato ketchup, chopped coriander and caster sugar to the cherry tomatoes and crush together with a wooden spoon to create a chunky salsa texture.

Turn the prawn toast when browned to cook on the opposite side and sprinkle the top with paprika.

Add a splash of soy sauce to the griddle pan over the skewers.

In a small bowl put 2 tbsp tomato ketchup and mix in chillies.

Serve the prawn skewers immediately with tomato salsa prawn toast and a little bit of chilli ketchup!
