xx D&DD's Gardeners Chicken

4 chicken thighs or drumsticks (or whatever is in the freezer)
2 oz smoked bacon
2 large onions
2 sticks celery
1/4 lb mushrooms
1 lb new potatoes (or old ones cut into quarters)
14 oz tin tomatoes
salt and pepper (I also add a pinch of mustard powder)

Chop bacon,peel and slice onions,chop celery and slice mushrooms.*note you can use up any veg you've got laying around for this I always chuck in a good couple of handfuls of chopped carrots too*
Heat a drop of oil in a frying pan and fry bacon,onions,celery and mushrooms (and any other bits) for 5 mins.
Remove and place in a large oven proof casserole dish.
Fry off chicken joints til they are starting to brown.
Add these to the layer of veggies and bacon,just lay them on top.
Chuck the potatoes,washed (and peeled if preferred)on top *uncooked*
Chuck over the tin of tomatoes and thats it you're done!
Season and cook covered for approx 1 1/2 hours on 300f,GM 2,160 C

The tomatoes seep down into the veggie mix and create a lovely gravy so theres no need to add any stock at all
